Balsamic Glazed Steak Roll-ups With Summertime Anytime Seasoning Blend

  • 1 lb. skirt steak, pounded thin and cut strips

  • 1/2 cup balsamic vinegar

  • 1 1/2 tbsp whole-grain mustard

  • 2 tbsps maple syrup

  • 2 tsps Earth Table Summertime Anytime Blend, divided

  • 2 tbsps olive oil, divided

  • 2 bell peppers, cut into thin strips

  • 1/2 lb asparagus, ends removed

  • Toothpicks 



  • Use a mallet or wine bottle and some plastic wrap to pound the steak thin. Cut into strips.

  • In a small pan over medium heat, combine vinegar, maple syrup, mustard, and 1 tsp of Summertime Anytime Blend. Bring mixture to a boil then reduce to a simmer and cook, stirring occasionally, until it has reduced by about a third (~10 minutes).

  • Meanwhile, in a skillet over medium heat, add 1 tbsp olive oil. Add peppers and asparagus. Cook until vegetables are tender, but still hold their shape (~5 minutes). Once finished, season them with 1 tsp Summertime Anytime Blend.

  • Brush both sides of steak strips with sauce. Place some asparagus and bell pepper in each piece of steak and wrap. Secure with a toothpick. 

  • In a large skillet over medium heat, add remaining tbsp of olive oil. Place steak roll-ups in skillet and cook 2 minutes per side. Brush with remaining marinade as steak cooks.
