  • 1 tsp olive oil

  • 6 oz. pork sausage or chorizo, casings removed

  • 2 tbsps flour

  • 2 tbsps butter

  • 1 cup whole milk

  • 1 cup Monterey Jack cheese, freshly grated*

  • 1.5 cups sharp cheddar, freshly grated*

  • 1/2 tbsp canned chipotle chiles in adobo, chopped

  • 1 tbsp Earth Table Boqueria Spanish Seasoning Blend

*Pre-shredded cheese won’t melt as evenly and often comes out tasting a bit grainy when melted.


  • Heat oil in a skillet over medium heat. Add meat and cook until browned (5-7 minutes).

  • Heat a separate large sauce pan over medium heat. Add butter and melt. Once melted, add flour and stir/whisk for one minute. Slowly add in milk and continue to stir mixture (2-3 minutes).

  • Add both cheeses, chipotles in adobe, and Boqueria Blend. Stir until cheese has melted and mixture has thickened (3-5 minutes).

  • Transfer to a serving dish and top with reserved sausage or chorizo.
